I made these cookies tonight and I swear on all that is holy they are the best thing I have eaten. Go! Make them right now. Your diet might be sorry, but you won't.
Peanut Butter Toffee Cookies
1/4 cup unsalted butter, softened
3/8 cup creamy peanut butter
1/2 cup plus 1/8 cup packed light brown sugar
1 1/2 tablespoons milk
1/2 tablespoon vanilla extract
1 egg
3/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups milk chocolate toffee bits
(this recipe yields about 30-35 cookies)
Preheat oven to 350 degrees. Cream together the butter and peanut butter in a mixing bowl. Add the sugar, continue to cream. Add the milk, vanilla and egg, mix. In a separate bowl mix the flour, soda, and salt with a whisk. Add the dry ingredients into the wet a little at a time, mixing between each addition. Do not overmix (just until incorporated). Fold in the toffee bits with a spatula. Drop spoonfuls of dough on a parchment paper covered cookie sheet. Bake for about 9 minutes at 350 degrees.
Let cool a minute and then enjoy with your favorite beverage. Milk, juice, coffee, champagne....hey who am I to judge?
And package them in cute little tins or bags as your wedding favor (don't forget to include the recipe).
